We’re talking Chicken Dum biryani and Amritsari chicken masala!

These are two of the most popular Indian chicken dishes served in Indian restaurants.  You can now prepare these two Indian chicken recipes in your home kitchen, to serve to your family and friends.

 

#1. Chicken Dum Biryani

A prized Indian chicken dish, this Indian chicken recipe is worth trying especially during festivals.

 

Servings: 4

Prep time: 20 minutes

Cook time: 1 hour 55 minutes

Total time: 2 hours 15 minutes

 

Ingredients:

500 g chicken legs (1 lb)

 

rice grains with measuring scoop in container

To prepare the Indian rice:

1 cup rice (preferably long-grain, basmati rice, washed)

½ tsp salt

5 black peppercorn

2 black cardamom

2 mace

1 stick cinnamon

3 cloves

5 cardamoms

2 cups of water

½ cup milk

A few saffron strands

 

To prepare the marinade:

1 ½ tsp salt

1 tsp garam masala powder

1 tsp coriander powder

½ tsp turmeric powder

½ cup yoghurt

2 tsp ginger garlic paste

1 tsp red chili powder

For finishing:

3 almonds, chopped

2 tbsp onion, fried

3 tsp coriander leaves, chopped

3 tsp ghee

 

Directions:

  1. Mix the saffron strands in half a cup of milk. Cover and keep aside.
  2. In a bowl, add the marination ingredients, mix and coat the chicken pieces and let them marinate for at least 4 hours.
  3. To make the rice, add all the ingredients and washed rice, except the saffron-milk, mix in warm water and let it cook for 15 minutes.
  4. Heat ghee (clarified butter) in a pan and add the marinated chicken. Stir before adding the cooked rice and saffron milk mix, chopped almonds, fried onion and coriander leaves. Give it a good stir.
  5. Cover with a foil and reduce the heat to low and allow to cook for 25-30 minutes or until the water has evaporated and the rice and chicken are completely cooked.
  6. Remove the foil once cooked, stir a few times, drizzle some rose water and serve immediately.

 

#2. Amritsari Chicken Masala

This sumptuous biryani is the second of thedelicious Indian Chicken Recipes when cooked with precision can impress the fussiest critics!

 

Servings: 4

Prep time: 15 minutes

Cook time: 40 minutes

Total time: 55 minutes

 

Ingredients:

To marinate:

2 tsp onion, chopped

1 tsp salt

1 tsp red chili powder

500 g chicken (1 lb)

1 tsp cumin powder

1 tsp coriander powder

3 tsp curd

1 tsp vinegar

1 tsp lemon juice

2 tsp ginger garlic paste

 

Ingredients To make the gravy:

3 tsp cream

½ tsp sugar

6 tomatoes, pureed

1 green chili

1 tsp salt

½ cup water

1 tsp ginger

1 tsp cumin powder, chopped

3 tsp butter

1 tsp coriander powder

1 tsp red chili powder

2 tsp butter

 

Directions to marinate:

  1. Keep all the chicken pieces in a big bowl.
  2. Add chopped onion, salt, red chili powder, cumin powder, coriander powder, lemon juice, curd, vinegar and ginger-garlic paste to the chicken.
  3. Mix all the ingredients using your fingers until the ingredients have mixed well and are properly coating the chicken. Let it marinate for at least 2 hours.

 

Directions to make the gravy:

  1. In a pan, heat the butter and add the red chilli powder to it. Saute it before adding the ginger, cumin powder and coriander powder and continue to saute.
  2. Stir in the water and mix well before adding sugar, tomato puree, green chili and salt.
  3. In another pan, heat butter and spread it evenly along all the sides of the pan.
  4. Add the marinated chicken pieces to the pan and saute them. Cover and cook until the chicken turns golden brown and the butter subsides.
  5. Mix the tomato gravy to the chicken and give it a good stir.
  6. Cover the pan and let it cook for a few more minutes so that the flavours can infuse properly.
  7. Remove the lid and add cream before mixing.
  8. Top with green chilies, coriander leaves and butter before serving.
