Preheat your oven to 375 degrees Fahrenheit and line your sheet pan with parchment paper.

Allow the bread to cool on a wire rack. Serve warm or at room temperature.
If you aren’t a fan of dried currants, you can leave them out completely or replace them with raisins or chocolate chips. However, if you want to keep it completely savory, you can add in two tablespoons of a combination of your favorite herbs and a cup of Parmesan cheese when making bread dough without yeast. You can even add in one finely diced jalapeno and a cup of cheddar cheese.
If you want plain soda bread, you can leave out the dried currants and orange zest completely. This allows the bread to be a great base for all types of sandwiches and spreads. The bread also tastes wonderfully toasted too.
As every oven is different, your bake time will vary. By using a cake tester or small wooden dowel, you can test the doneness of your bread. If it comes out clean, the bread is done, if pieces of dough stick to it, the bread needs more time.
Tapping on bread is another common way to test if your bread is fully baked. If you gently tap on the bread and it sounds hollow, then your bread is done. If it does not have a hollow sound, it needs to be baked for longer.
Any leftover bread should be kept in an airtight container for up to three days. The bread can also be kept in the fridge for up to one week.
