- 3 each Pita breads or whole wheat wraps cut in half
- 1 Can chickpeas, drained and soaked (utmost 1 heaped cup of cooked chickpeas)
- 2 sprigs Green onions thinly chopped
- Zest of one lemon
- 3 each small celery stick, diced
- 1 ½ Tsp semi-dried red or green chilies
- 1/2 each ½ cucumber finely chopped
- 1/3 Cup mint leaves chopped
- 1-1/2 Tblsp hummus
- 1 Tblsp cashew cream
- 2 ea Medium avocados, diced
- 1 Tblsp Lemon Juice
- Salt and Pepper to taste
- 1/2 Tblsp maple syrup

- Preparation method: 1. Put chickpeas in a food processor and pulse 3-5 times. 2. If you don't have a food processor, you can smash chick peas in a bow with a fork. 3. Pour the results into a bowl. 4. In that same bowl, add the thinly chopped onions, celery, cucumber, chilies, lemon zest and mint leaves. 5. Mix them thoroughly. 6. In a medium bowl, add the hummus, lemon juice, maple syrup, cashew cream and mix thoroughly. 7. Pour the chickpea blend into the bowl, then add the diced avocados and gently mix. 8. Warm the wraps or the pita bread in a hot pan or toaster oven until soft. 9. Smear a few tablespoons of the chick pea blend inside the pita, or on top of the wraps, then roll them tightly. Toast briefly to seal the edges. 10. Slice in half and serve them while hot. There you go! A quick and easy way to fix a meal that pumps you up and lift up your mood.
